A historic estate reimagined by Fairmont

Nestled in the heart of 64 hectares of parks and gardens, on the shores of The Mere, this estate, which dates back several centuries, is embarking on a new chapter following a major refurbishment carried out by the Select Group. First mentioned as early as Domesday Book dating back to 1086, the estate was successively a seigneurial estate, a private club and then a hotel, before becoming part of the portfolio of Fairmont Hotels & Resorts. This opening marks a new stage in the brand’s development in the UK, where it now has four outlets, alongside the Savoy from London, from Fairmont Windsor Park and Fairmont St Andrews.
Fine dining, wellbeing and the British way of life

More than just a hotel, the Fairmont Cheshire, The Mere presents itself as a true destination where nature, fine dining and wellness come together in a quintessentially British setting. The 116 rooms and suites, overlooking the gardens or the lake, are complemented by a spacious Fairmont spa, an 18-hole championship golf course and a particularly refined dining experience.
The chef Gordon Ramsay is home to the fine-dining restaurant Gordon Ramsay at The Mere, whilst The Orangery celebrates the tradition of theafternoon tea over exquisite pastries and champagne. The Club Lounge, meanwhile, puts a new spin on British classics by blending them with Indian influences, reflecting the UK’s culinary diversity. Thanks to its proximity to Manchester, the hotel also aims to become a leading choice for leisure stays, corporate events and weddings.
A new luxury destination in Cheshire

With this property, Fairmont is not simply opening a new hotel: the brand is helping to establish Cheshire as a luxury tourism destination. The interiors, designed by the British firm Bergman Design House, blend contemporary elegance with English heritage, whilst the vast estate invites guests to slow down and enjoy walks by the lake, spa treatments and rounds of golf. Following an investment of nearly £125 million, this revival illustrates Fairmont’s commitment to prioritising venues steeped in history and deeply rooted in their local communities.
Less than fifteen minutes from Manchester Airport, the Fairmont Cheshire, The Mere offers a new gateway to a more intimate side of England, where refinement is experienced in the tranquillity of the countryside rather than in the heart of major cities.
