There are places that carry within them a memory, an architecture, a landscape. On the heights of Bormes-les-Mimosas, a famous medieval village suspended between fragrant hills and the azure sea, the’Eden Rose Grand Hôtel establishes itself as a captivating stopover on the French Riviera.

Built in 1903, the Eden Rose Grand Hôtel is part of the architectural heritage of Bormes-les-Mimosas. With its silhouette Belle Époque Dominating the valley, the hotel seems to have been watching over the village for over a century. Long a discreet address, it experienced a spectacular renaissance when the Da Cunha family took over the establishment in 2019. Two years of meticulous renovation were needed to bring this historic residence back to life, which finally reopened in 2021 in a sublimated form.

The original architecture has been preserved: bright facades, volumes, terraces open to the landscape. From the balconies of the rooms and suites, the gaze embraces the stones of the medieval village, the Provençal vegetation, the Mediterranean and, in the distance, the famous Golden Isles or Hyères Islands.Porquerolles, Port-Cros, Île du Levant and Bagaud Island), natural gems of the Var coastline. The establishment, which is open all year round, fosters a way of life that extends beyond the peak summer season.
But what also sets Eden Rose apart, beyond its heritage, is its gastronomic offering.
A generous and refined Mediterranean table

As soon as the good weather arrives, on the terrace, make way for cuisine inspired by Mediterranean terroir and the diversity of Provençal produce.
The restaurant’s menu features fresh produce, aromatic herbs, sun-kissed vegetables and Mediterranean fish. Not to be missed: salmon carpaccio, sea bass, sea bream and other grilled fish seasoned with local olive oil; roast meats with herbs from the maquis; slow-cooked vegetables; and creamy burrata served with heirloom tomatoes.
The desserts continue this culinary journey: pavlova with red berries, a reimagined lemon tart, premium chocolate mousse, or ice-cream creations designed for warm summer evenings.
With its breathtaking views, this terrace is just as popular for its signature cocktails as it is for the magic of the evenings.
The Riviera spirit, contemporary version

L’Eden Rose subtly cultivates the Riviera spirit, that of grand Mediterranean residences where time seems to stand still. When the temperature rises, the hotel reveals its third facet with its infinity pool overlooking the valley. Here, luxury is not ostentatious. It is discernible in the light that floods the terraces, in the three-hectare park planted with olive trees, mimosas, cork oaks, and cacti. Wide loungers, soft music: everything contributes to creating that typically Azorean sensation of gentle living.
Rooms open to the Mediterranean

The 43 rooms at Eden Rose combine contemporary elegance with Mediterranean charm. Available in several categories, including a magnificent suite for newlyweds, they all offer generous space with very high ceilings, vast walk-in showers, refined decor in natural tones, and a particularly soothing atmosphere. The high-end bedding promises restorative nights, while the large picture windows let in plenty of natural light. Many rooms have a private balcony or terrace with panoramic views of the garden and the Golden Isles. The Grand Luxe suites and rooms add an exceptional touch with, once again, sublime spaces and a spectacular panorama of the Mediterranean.
The timeless charm of Bormes-les-Mimosas

You wouldn't want to stay at the hotel without visiting the village of Bormes-les-Mimosas. It is now accessible via a specially designed staircase to make access easier for guests.
Bormes-les-Mimosas is one of the most beautiful villages on the Var coast, nestled between the sea and the hills. Listed as one of France’s most remarkable ‘villages fleuris’ (flower-filled villages), it owes its name to the numerous mimosa trees that brighten up the landscape with their vibrant yellow blossoms every winter.
Its historic heart, of medieval origin, is captivating with its narrow, cobbled streets, its arched passageways, its stone staircases and its shaded little squares. While strolling through the old village, one discovers a rich architectural heritage, with old houses featuring colourful facades, abundantly adorned with bougainvillea, jasmine and wisteria.

After a day spent wandering through the old village lanes or exploring the paths overlooking the Mediterranean, returning to Eden Rose extends this interlude of gentleness. The hotel's spa invites you to slow down, with treatments, relaxation in the sauna, and a soothing atmosphere. A welcome stop before sitting down to dinner at the restaurant or retiring to your room, as if to prolong the serenity you seek in Bormes-les-Mimosas just a little longer.

Thus, the Eden Rose Grand Hotel manages a delicate balance: preserving the soul of a historic building while meeting the expectations of the contemporary traveller. A destination where one comes as much to sleep as to contemplate, to taste, to slow down.
